METHOD
Melt the butter in a saucepan.
Fry the onion and mushrooms in the butter.
Add the turkey, then the apple, nuts, sherry, cranberry sauce and a pinch of cayenne pepper, stir well then allow to cool.
Brush the layers of filo pastry with the melted butter.
Place on layer on top of another – you will need three layers per parcel.
Place a spoonful of the mixture in the middle of the filo, brush the edges with a little butter and bring the edges together to form a small parcel or sack.
Place on a baking tray and brush the remainder of the butter all over the parcels and bake in an oven at 180º C for 8-10 minutes or until golden brown.
