ROASTED PARSNIPS WITH PARMESAN CHEESE - recipe by Euros Owen

INGRIEDIENTS

50g butter
450g parsnips - peeled and cut
50g Parmesan cheese - grated
25g plain flour
METHOD
Preheat the oven to 180°C/350°F/Gas 4.

Put the butter in a roasting tin and place in the oven.

Parboil the parsnips for 4 minutes until they start to soften.

Mix together the cheese and flour in a bowl.

Roll the parsnips in the flour and cheese and place on a plate.

Remove the tin from the oven, place the parsnips in the melted butter and cover well.

Roast in the oven for 20 minutes, remove and turn the parsnips over then return to the oven for a further 20 minutes or until they are ready.

Serve at once.
