BLACKBERRY SORBET - recipe by Euros Owen

INGRIEDIENTS

½ pt water
200g sugar
450g blackberries
3 egg whites - well beaten into peaks
METHOD
Boil the water and sugar in a saucepan until the liquid is reduced by half.

Add the blackberries and boil until tender.

Place the mixture through a fine sieve into a bowl, pressing the berries into a mash.

Transfer the mixture into a plastic tub and place in the freezer for 4 hours.

Place the half frozen berry mixture into a bowl and beat until it starts to change colour.

Gradually, add the egg whites to the berry mixture.

Place the mixture back in the plastic tub and then freeze for 24 hours.

Remove from freezer half an hour before serving.
