METHOD
Heat oil and butter in a frying pan.
Place flour on a plate and season with salt and pepper.
Coat the fish filets in the flour.
Place filets in the frying pan skin side down and cook until skin is crisp.
Turn filets and cook on other side for about 5-10 minutes until cooked.
The Salsa – put tomatoes and onion in a bowl and mix well. Add lemon juice, oil and parsley and mix.
Serve salsa on plate with filets on top.
