INGRIEDIENTS

1kg cockles in shell
25g butter
1 onion – finely chopped
2 cloves of garlic (optional)
100ml apple juice
METHOD
Melt the butter in a saucepan and fry the onion until softened.

Add the apple juice and bring to the boil then add the cockles.

Place a lid on the saucepan and leave to cook for about 5 minutes until cockles open.
