NEW QUAY MACKEREL AND PRAWNS

INGRIEDIENTS

4 tablespoon plain flour
Pinch of salt
Pinch of pepper
50g butter
2 mackerel fillets
150g prawns – shelled
6 shallots – quartered
½ red pepper – de-seeded and cut into strips
1 garlic clove – finely chopped
1 lime – zest
240ml medium white wine
1 tablespoon coriander – coarsely chopped
3 spring onions - finely sliced
METHOD
Place the flour on a plate and add the salt and pepper. Dip filets into flour.

Melt the butter in a frying pan and add the fillets and cook for 2 mins each side.

Add shallots, red pepper, garlic and chilli and cook for 3 mins until softened.

Add prawns, zest of lime, white wine and simmer for a minute.

Serve on a plate with coriander and spring onions.
