METHOD
Place the flour on a plate and add the salt and pepper. Dip filets into flour.
Melt the butter in a frying pan and add the fillets and cook for 2 mins each side.
Add shallots, red pepper, garlic and chilli and cook for 3 mins until softened.
Add prawns, zest of lime, white wine and simmer for a minute.
Serve on a plate with coriander and spring onions.
