INGRIEDIENTS

6 herrings – bones removed
3 apples – skin removed and grated
Salt
Pepper
3 onions – finely chopped
½ loaf – make breadcrumbs
50g nuts – finely chopped
150g butter
METHOD
Heat oven to 180°C, 360 Fahrenheit, gas 4.

Grease an ovenproof dish with some of the butter.

Melt 100g of the butter in a frying pan and add the onions until softened and golden in colour.

In a bowl mix the breadcrumbs and nuts.

Place half the onions in the bottom of the ovenproof dish and a handful of the breadcrumb mix.

Place a layer of apple on top of onions and breadcrumbs and place the herrings on top.

Pinch of salt and pepper.

Place other half of onions on top of other ingredients, then the remaining apple and finishing it off with breadcrumb mix.

Place remaining butter (50g) in small cubes over the finished dish.

Bake in oven for 20-25 mins or until crispy.
