INGRIEDIENTS

2 x 226 hake fillets
Pinch of salt
Pinch of pepper
12 small tomatoes – halved and roasted in oven for 30 mins
Fresh thyme
Fresh basil

SALSA

½ red pepper – de-seeded, roasted and finely cubed
½ yellow pepper – de-seeded, roasted and finely cubed
½ lemon – zest
METHOD
To make one parcel:

Heat oven to 200°C, 400 Fahrenheit, gas 6.

Place a 12 inch square piece of greaseproof paper on a table and place half of the tomatoes and a sprig of thyme in the middle.

Place one filet of hake on top and season.

Place 3 basil leaves on top and close paper like a parcel around the ingredients.

Roast in oven for 10 mins.


Place salsa on plate with hake and tomatoes.
