GREEN THAI CURRY

ENOUGH FOR :

INGRIEDIENTS

2 tablespoons of sesame oil
½ a red onion
4 chicken breasts - chopped
1 tablespoon of green Thai curry paste
1 tin of coconut milk
basmati rice
1 bunch of fresh coriander - chopped
METHOD
Fry the onion in the sesame oil. Add the chicken and fry until brown before adding the curry paste and cook for 5 minutes. Pour the coconut milk over and cook until it starts to boil. Finally mix in the fresh coriander and serve on a bed of boiled basmati rice.
