ENOUGH FOR : 8 - 10

INGRIEDIENTS

1.4 kg/3 lb of Welsh beef - cut into cubes
olive oil
2 beef stock cubes
2 teaspoons of paprika
1 tablespoon of chilli powder
2 onions - cut into cubes
4 cloves of garlic - finely chopped
2 tablespoons of tomato puree
1 tablespoon of brown sugar
2 tins of tomatoes - chopped
4 red chillies and the seeds - finely chopped
1 ltr/2 pints of water
2 teaspoons of cumin powder
500g/1lb 2oz of Pembrokeshire new potatoes - uncooked and halved
2 big tins of kidney beans
juice of ½ lime
anglesey salt
black pepper

to serve
rice - boiled or chunks of fresh bread
sour cream
handful of fresh coriander - chopped
METHOD
In a big saucepan brown the beef in the oil. Add a pinch of black pepper, paprika, chilli powder and the stock cubes and mix well. Add the onions and the garlic and cook until brown. Mix in the puree and cook for a few minutes before adding the sugar, tomatoes, chillies, cumin and the water. Mix well and bring to the boil and leave to simmer on a medium heat for 1 hour. Add the potatoes and beans and simmer for a further 30 minutes. Before serving add the lime juice. Serve with rice or chunks of fresh bread, a spoonful of sour cream and fresh coriander.
