METHOD
Peel, boil and mash the potatoes. In a frying pan, melt some of the butter and fry the leeks lightly with some black pepper. Mix the mashed potatoes, leeks, emanthal and gorgonzola cheese, a little more butter and salt and pepper with the egg yolks. Mix well and shape into potato cakes. Heat the olive oil in a frying pan and fry the potato cakes on both sides until they are lightly browned.
