METHOD
The fish
Season the fish. Heat the oil in a baking tray and seal the fish on both sides. Bake in the oven at a temperature of 220C for 10-12 minutes.
The sauce
In a pan, fry the garlic in a drop of oil. Add the paprika, vinegar, sherry and salt and pepper. Reduce.Serve hot with the sauce over the fish with a light sprinkling of paprika and a piece of lemon.
