ITALIAN BRUCHETTA

INGRIEDIENTS

1 French stick
olive oil
8 fresh tomatoes - no seeds and finely chopped
handful of fresh basil - finely chopped
1 red onion - finely chopped
2-3 cloves of garlic - finely chopped
juice of 1 lemon
1 pack of mozarella cheese - cut into 8 slices
salt and black pepper
METHOD
Cut the bread into thick slices and put some olive oil on the bread and season. Cook in a hot oven for 10 minutes. In a large mixing bowl, mix the tomatoes, onions, garlic, basil, lemon juice, some olive oil and salt and pepper. Put the mixture on the bread and place a slice of mozzarella on top to finish. Place in the oven or under a hot grill to melt the cheese. Serve whilst hot.
