METHOD
Boil the lobster in a large saucepan of boiling water for 15 - 20 min. Leave to cool in cold water. Cut the lobster in half and release the meat from the tail. Take the white meat from the claws and place all the meat back into the shell. Place the lobster on a tray or in a frying pan. Season with sea salt, black pepper, lemon juice, parsley and a drizzle of olive oil. Cook under a hot grill for 5 - 10 min until warmed through. To serve place half the lobster on a plate with salad leaves of your choice and a wedge of fresh lemon.
