METHOD
The tofu
Cut the tofu steak into equal pieces. Dip in the rice flour and deep fry in the oil until golden brown. Heat oil in a frying pan and cook the leeks and mushrooms for 2 minutes.
The sauce
In a saucepan heat the soy sauce, mirin, sake and sugar. Bring to the boil. Allow to cool. Blend the garlic, chilli sauce and onion together and add to the cooled mixture, mix well.
Place the tofu on top of the vegetables and serve with the marinade sauce
